Spinach paratha with egg stuffing
It is an iron and protein rich recipe. It is a substitute of Nan or Bread. In pregnancy, women can enjoy this recipe for a change. It is also a tasty mid meal for children. Mom can prepare it for Tiffin.
Ingredients:
Spinach (boiled and crushed)* |

Wheat flour |
250 grams |
Egg |
2 scrambled |
Black pepper |

Black gram dal (pulse) flour |

Method:
Sieve the flour and black gram dal flour. Add 1tsp fat and a pinch salt.
Knead the flour with crushed spinach and its soup.
Make soft dough. Keep a side for 5 minutes.
Take scrambled (cooked) eggs. Add black pepper and salt. Add coriander leaves and half cooked, chopped onion. Mix well. Make it as a filling.
Make round balls of dough. Flat it with a palm. Fill it with egg filling and make like a round ball shape by sticking the edges.
On rolling board, roll the ball lightly into round shape with roller. When it is larger in shape, put it in the heated frying pan and cook on slow fire from both the sides by spreading fat on each side. Make parathas from all the balls.
Serve with favorite vegetable or chutney.
*Do not drain out the boiled Spinach water.
It is recommended to add spices as per choice such as red chilies.
