Soy beans- 1 cup, Water -5 cups
Onion- 2, Chillis -3, Garlic- 1 tsp
Ginger- 1 tsp, Soda- 1 tsp, Pepper- 1 tsp
Garam masala- 1 tsp, Salt- to taste
Sodium benzoate- � tsp, Citric acid- a pinch
Vinegar- 6 tsp, Sugar- 2 tsp
Soak soy beans in water adding soda for five hours. Cook soybeans unto three whistles adding onion, chilli, garlic, ginger, pepper, garam masala, when it cools grind to a fine paste and sieve it. Repeat it number of times adding the required water. Allow it to boil . the paste should condense to half the quantity. Now add salt , sodium benzoate, and citric acid. Allow it to cool and preserve in a bottle in the fridge. Tastes good with noodles and pasta.
